Tres Leches Cake Recipe

I love cake!!   I have had Tres Leches cake before,  but I haven't had one that tastes the way Tres Leches should taste, the way people make it in Mexico.  Get ready to try out this delicious Mexican recipe.  :)

Ingredients:
* 1 1/2 cups of all-purpose flour
* 1 teaspoon of baking powder
* 1/2 cup of unsalted butter
* 2 cups white sugar (divided)
* 5 eggs
* 1 1/2 teaspoon of vanilla extract (divided)
* 1 cup of milk
* 1/2 of a 14oz. can of sweetened condensed milk ( I prefer La Lechera)
* 1/2 of a 12oz. can of evaporated milk
* 1/3 cup brandy  (this is optional, but  the cake tastes better with it )
* 1 1/2 cups of heavy whipping cream


Preheat oven to 350 degrees
Grease and flour a 9x13  baking pan.

Sift flour and baking powder together and set them aside. Cream the butter and 1 cup of sugar together until fluffy. Add the 5 eggs and 1/2 teaspoon of the vanilla extract. Beat well. Add the flour mixture to the butter mixture, 2 tablespoons at a time, mixing it well until blended. Pour batter into pan. Bake for 30 minutes.

When cake is done, pierce it in 7 to 10 places with a fork and let it cool. Now combine the whole milk, the condensed milk, evaporated milk and the brandy( I like to use rum Bacardi), and pour it over the cooled cake. Put the cake in the refrigerator for at least 2 hours before serving it.

Topping:
When ready to serve:
Combine the whipping cream, and 1 teaspoon of vanilla extract and 1 cup of sugar, whip it until thick.  Spread it over the cake.

You can add fruit to the top, like strawberries and pineapple.

Note: Don't try to substitute sugar for a no calorie sweetener, you will get a cookie instead of cake!
